Rediculously Practical Meals: Salad

So far none of my super easy meals have been very healthful, so I thought it was about time I made one that was. This makes a big salad, so if you are like me and can eat just salad for dinner you don't have to do anything else. If you are like my fiance and think no meal is complete without meat, add a side of fish or chicken. You could even chop up meat and add it to the salad if you want to be extra adventurous.


 I eyeball my salads, I don't use a precise amount. I just go until it looks good. For this salad I used:

  • Lettuce (I bet you didn't guess that one). I used approximately half of one of the plastic tubs of lettuce they have at Whole Foods. Really you can use any lettuce.
  • One handful of sugar infused cranberries.
  • One half of a yellow bell pepper.
  • Sundried tomatoes.
  • Artichoke hearts.
  • Kalamata olives.
  • A small handful of feta cheese.
  • A couple sprinkles of parmesean cheese.
  • Garlic & cheese croutons.
  • A tablespoon of honey mustard dressing.
 I took all the ingredients except the cranberries, cheeses, croutons, and dressing and chopped them up. I used scissors on everything but the bell pepper. I had to use a knife on the pepper, otherwise it would have ended up mottled and bruised, which would have ruined the nice bright yellow color in my salad. Then I through everything in a big bowl together and mixed it with my hands. Don't worry, I washed them thorouoghly.

I enjoyed this salad and would definitely make it again. The one thing I wouldn't add on a second run through are the olives. I've never really liked olives, but I use to not like tomatoes either. I was hoping I had changed my mind. I hadn't.
