I eyeball my salads, I don't use a precise amount. I just go until it looks good. For this salad I used:
- Lettuce (I bet you didn't guess that one). I used approximately half of one of the plastic tubs of lettuce they have at Whole Foods. Really you can use any lettuce.
- One handful of sugar infused cranberries.
- One half of a yellow bell pepper.
- Sundried tomatoes.
- Artichoke hearts.
- Kalamata olives.
- A small handful of feta cheese.
- A couple sprinkles of parmesean cheese.
- Garlic & cheese croutons.
- A tablespoon of honey mustard dressing.
I enjoyed this salad and would definitely make it again. The one thing I wouldn't add on a second run through are the olives. I've never really liked olives, but I use to not like tomatoes either. I was hoping I had changed my mind. I hadn't.
