I have been trying to eat breakfast everyday before work. I feel so much better when I've eaten within an hour of waking up. My mood, stamina, and metabolism all do far better for the whole day. However, since adopting my dog squeezing breakfast in between morning walks, digging clothes out of my closet, and making my hair look acceptable is difficult. If breakfast isn't fast and easy, it doesn't happen. Lately I've been having a glass of Instant Breakfast (which tastes like chocolate milk) in the morning along with half a muffin. We buy both from Costco so we have a bulk supply that will last a while. It costs us approximately 93 cents each, or $1.86 for the two of us per day. That means we spend $13.02 on breakfast for the entire week. Not to mention it's pretty tasty and you can use neon colored straws to make it festive.
Going away from breakfast, I've been loving Chocolate Caramel Covered Apples for dessert. There is just something about about the richness of chocolate and caramel juxtaposed against the tart, fresh apple that is absolutely breath taking. They are wonderfully delicious, absolutely Autumnal, and (for dessert) relatively healthy. If you like dark chocolate you can make them even more healthy. Unfortunately I don't, so that ship has sailed for me.
My apples didn't turn out very pretty, but they tasted good. I used this recipe, but the next time I make them I will use milk chocolate instead of semi-sweet. Some problems I ran into: making all four apples at once meant the caramel and chocolate from the first apples I dipped were pooled at the bottom by the time I finished the fourth apple, my chocolate was was steaming hot and yet it was still lumpy, I used fondue forks rather than wooden skewers and trying to fit them into my fridge to cool was difficult (fondue forks are longer than wooden skewers). I'm hoping I can solve the pooling and lump problems. If I do I will post the solutions on here later. If you know how to solve these problems please let me know below, I would love to hear from you!
