Ridiculously Practical Meals: Chicken N Gravy

I don't know about you, but I love when I can sit back and let my crock-pot do all the work. Today I took my meal inspiration from the Crock-Pot Ladies and made some delicious Chicken N Gravy. I followed Katie's recipe almost to a T, the exceptions being that I used two cans of cream of chicken soup with herbs instead of one can of cream of chicken soup and I just used two packets of dry (powder) brown gravy instead of two packets of dry chicken gravy. The second swap out was due to the fact that my grocery store doesn't sell chicken gravy, go figure.


You will need: 1 to 1.5 pounds of boneless chicken breasts, 2 packages powdered gravy mix, 2 cans cream of chicken soup with herbs, and two cups of water. Combine everything but the chicken in your crock-pot (which should currently be off). Stir until cohesive. Add chicken breasts. Turn crock-pot on to low and cook for 5 hours. I did this at lunch and then went back to work. When you get back home and the five hours are up all you have to do is shred the chicken with a fork. I was little bit nervous about shredding the chicken as I had never done this before, turns out after stewing for 5 hours it is extremely easy to shred. It took me about one minute to shred 1.23 pounds of chicken. Not bad.


Katie suggests serving your chicken over pasta or mashed potatoes. The first time I made this dish I put it over pasta with a generous helping of gravy as 'sauce.' It was delicious and definitely something I would do again. If you want to go this route cook up your pasta during the last 11 minutes that your chicken is in the crock-pot. It should take you a total of 18 to 20 minutes to prepare the entire dish, not counting the 5 hours your chicken is sitting unattended. 4 minutes to combine ingredients and get your chicken cooking, 11 minutes to cook your pasta, 1 minute to shred your chicken, and two to four minutes to plate and serve.


Today I thought I would try out making sandwiches instead! I toasted a bit of rosemary bread, ladled the chicken on top, added a slice of provolone, and topped with a second slice of toasted rosemary. I also tossed a Cesar salad and served it on the side. This took me a total of 15 minutes, not counting the 5 hours the chicken is unattended. 4 minutes to combine ingredients and get the chicken cooking, 4 minutes to toss and prepare a salad, 2 minutes to lightly toast the bread, 5 minutes to plate and serve.


I think this would also be really good on a bread roll, possibly a little easier to eat without the crust, too. This was extremely easy and husband approved! If you have a crock-post at home gathering dust, I highly recommend that you pick up some recipes from the Crock-Pot Ladies. Bon appétit!
