Ridiculously Practical Meals: Fish Tacos

Tacos are a great easy and filling meal to throw together if you don't want to put in a lot of work. Admittedly I normally make beef tacos as I'm not a huge fish fan, but Hubby and I have been trying to stick with the Mediterranean diet lately for health reasons and fish is a huge YES and beef is something your supposed to try and limit to a few times a month. I plan on talking more about the Mediterranean diet in a future post (maybe next Tuesday), but for now let's stick with the meal!


Fish tacos can be really delicious, but if you are taking the time to batter your own fish it takes even longer. Instead I skipped that step by using these tortilla coated Tilapia from Costco. Throw them (I used 3 fillets) on a cookie sheet in the oven at 425 degrees for 10 to 13 minutes. In the mean time chop up some cilantro, green onions, and a few small tomatoes. Warm up a tortilla then spread a salsa of your choice across it. Pull the fish out of the oven, chop them. Add fish on top of the salsa and cilantro and green onion to taste.


That alone is pretty healthy, but I can't resist adding cheese. Yum! Total it took me about 15 minutes to make since I did most of the prep while the fish were cooking.

  1. Ahh too much love for this post! 1. I LOVE fish tacos but also of course beef tacos hehe. It's hard to limit our beef intake but trying to put an effort is a start ;) 2. This looks easy & so yummy to make! 3. Eastwood is adorable, photobombing haha.

    1. Yeah, limiting beef is definitely going to be the hardest part of eating healthy for Hubby and I. We can do it, though! I think the biggest thing is to do it slowly so we don't overwhelm ourselves and quit. I hope you like the tacos if you try them out!
