The last three minutes of the noodles cook time, add frozen shrimp (I used ones that were ready to eat, no tails) to taste. I used approximately two handfuls of shrimp. When the time is up drain the noodles and shrimp, dump into a large bowl, and add a tablespoon of olive oil, squeeze the lemon halves in, mix in the capers and basil, add a pinch of salt, and stir. When the pasta is well mixed portion out over a small bed of spinach.
This meal took me a total of 15 minutes to make since I was able to prepare most of the ingredients while the pasta cooked. The sauce of lemon & olive oil was flavorful and light. This would be perfect on a warm evening, but is still very tasty on a cold night. Don't forget to add a glass of wine!

Delete15 minutes and it looks like it came straight from a restaurant - yum! i have to admit i get a bit intimidated by capers, but this looks so good i just might try it :)
ReplyDeleteCapers have a lot of flavor, so I can understand that. They are really easy though, I just used a fork to scoop them out of the little jar so that all the juice would drain back. Easy-peasy!
