Ridiculously Practical Meals: Lemon & Shrimp Pasta

After my post on eating the Mediterranean Diet, I figured my next easy meal better be Mediterranean! Last night we had Lemon & Shrimp pasta. At first Hubby was a little concerned by the ingredients (it has spinach and capers) and didn't think he would like it, but by the end of dinner he had asked me to make it for him again!

To start off throw some spaghetti noodles in a pot and cook till al dente (normally around 11 minutes, but check the package instructions). While this is cooking chop up fresh basil to taste (I used a little over a quarter of a cup), measure out two tablespoons of drained capers, and cut a lemon in half.


The last three minutes of the noodles cook time, add frozen shrimp (I used ones that were ready to eat, no tails) to taste. I used approximately two handfuls of shrimp. When the time is up drain the noodles and shrimp, dump into a large bowl, and add a tablespoon of olive oil, squeeze the lemon halves in, mix in the capers and basil, add a pinch of salt, and stir. When the pasta is well mixed portion out over a small bed of spinach.


This meal took me a total of 15 minutes to make since I was able to prepare most of the ingredients while the pasta cooked. The sauce of lemon & olive oil was flavorful and light. This would be perfect on a warm evening, but is still very tasty on a cold night. Don't forget to add a glass of wine!

  9. 15 minutes and it looks like it came straight from a restaurant - yum! i have to admit i get a bit intimidated by capers, but this looks so good i just might try it :)

    1. Capers have a lot of flavor, so I can understand that. They are really easy though, I just used a fork to scoop them out of the little jar so that all the juice would drain back. Easy-peasy!

  17. This looks so good. I actually LOVE making lemon-flavored sauces for pasta and have done it with chicken as well as salmon but somehow it didn't even cross my mind to try shrimps with capers! Thanks for the great advice!
