Ridiculously Practical Meas: One Dish Chicken And Rice

The other day my puppy was sick and, if you've ever had a dog, you may know that one way to calm a dog's stomach is to feed it boiled chicken and plain rice for dinner which is what I did. Not wanting to have to go shopping for any more ingredients, I looked around for something easy I could make with what I already had in my house. With a few minor alterations, this Campbell's recipe fit the bill.


Start off by gathering up 2 tablespoons flour, 1 large Reynolds Oven Bag (I'm assuming other brands would work, but Reynolds is the only brand my grocery carries), 2 cups uncooked minute rice, 2 10.5 ounce cans of chicken broth, 3 cups assorted frozen veggies, 1.25 pounds boneless and skinless chicken breast, garlic powder, lemon pepper seasoning.


Preheat your oven to 350 degrees. Throw your flour in the oven bag, shake around a bit. Add rice, chicken broth, and veggies to bag, mush everything together. Place the bag in a 13 x 9 x 2-inch or larger pan. Cut chicken breasts in halves or thirds and coat with garlic powder and lemon pepper. Toss that in the bag. Tie the bag up with the provided nylon tie (it should be included in your oven bag box) and cut 6 small slits in the top of the bag. Slide into oven. Cook for 30 minutes. Check if your chicken is cooked all the way through. If not (it wasn't for me) cook for an additional 10 minutes.


While the cook time for this dish is long, the time spent making everything is really short. It took under ten minutes, probably closer to 5 minutes. Hubby loved it and said this was one of his favorites. I hope you enjoy it, bon appétit!

    1. I would think that there are ways that would work (maybe a fake meat substitute by Gardein?), but since I have no experience cooking as a vegan I couldn't tell you for sure. I'm sorry I can't be of more help!

    1. Same here! When I first got my dog he was malnurished and the vet recommended it for days he didn't want to eat. Now, when he is sick, that's what I make him for dinner! I hope you enjoyed the meal!
