Ridiculously Practical Meals: Chicken Sausage Egg Boats
Breakfast for dinner? Yes, please. You could also save this for Saturday morning and pair this with you pre-made mimosa for the perfect lazy weekend. Or, you know, you could have it now because who wants to wait?
You will need 2 demi French baguettes (the bread/bakery of almost every grocery store has them), 3 to 4 ounces of Applegate Chicken & Apple Sausage (half of a 7 ounce package), 4 eggs, 1/4 cup heavy cream, 5 ounces of grated pepper jack cheese (if you don't like pepper jack replace this with a sharp cheddar), 1 to 2 green onions thinly sliced.
Preheat your oven to 350 degrees Farenheit. Cut a 'V' in the middle of each baguette, hollowing it out so there is a nice sized gap for your eggs. Applegate's sausage is precooked, but if you bought a different brand make sure that your sausage is thoroughly cooked before continuing. Cut sausage into small pieces. Whisk eggs and cream. Add sausage, cheese, and onions to egg mixture. Stir. Divide mixture in half and pour one half into each baguette. Place baguettes on baking sheet and bake for 25 to 28 minutes. Allow them to cool before serving.
The end product is delicious, warm, and comforting. The perfect cozy concoction to eat in bed (start trying to convince your spouse to make you breakfast in bed now) or in cozy PJs with some coffee. It's also great as a light dinner. Even my husband, who hates eggs, liked it. Bon appétit!

Oh my gosh this looks amazing, I am a huge fan of "chewy" bread so I LOVE baguettes. This looks incredible. And yes, a mimosa with this would be heaven!
