Ridiculously Practical Meals: Belgian Waffles

I seem to be on a breakfast roll (get it?). This time I didn't have breakfast for dinner, I had take out for dinner last night, because it was one of those nights. Since I didn't have anything from dinner to show you I thought I'd share one of my favorite breakfast combos! And you just can't go wrong with Belgian waffles.


It's really simple, yet delicious! You will need frozen Belgian Waffles, I got a 24 pack from Costco, cream cheese, fig spread, and fresh fruit of choice.


Take one waffle and put it in your toaster at the lowest setting. It doesn't take much to heat these babies up and burn them, so be sure it is lowest setting. If it needs more time flip the waffle and cook one more time at the lowest setting. If you have more time you can also cook these in the oven, which makes them less likely to burn, but I didn't have time for my oven to preheat! When it is out of the toaster, spread your cream cheese in a thin layer and then top with fig spread (I found my fig spread at Whole Foods). I chose a nectarine as my fruit of choice, removed the pit, and cut it into four pieces which I served on the side. Mmmm, delicious, and super fast for week day mornings! Don't forget to serve yourself a cup of coffee!

  11. Oh yum, looks like a super tasty breakfast! I have to scoot out the door with a banana, yogurt and tub of cereal on workdays but love to indulge in fancy breakfasts when I'm off, this is going on the list! x
