Ridiculously Practical Meals: Mint & Lemon Pasta

If you've been reading my blog long enough, you may have noticed that I'm a sucker for light, summery pastas. Yesterday I was at a loss of what to make for dinner, so I simply tossed a whole bunch of my favorite summer veggies and fruits into pasta and, ta-da, a simple delicious meal that took under 20 minutes!


You will need: 1/2 box of spaghetti noodles (1/2 pound), virgin olive oil, 3 tablespoons lemon juice, cherry tomatoes, 1 corn on the cob, 2 cloves of garlic, pre-flavored shrimp (plain will work if you prefer it, but I found scampi flavored shrimp at Whole Foods), 3/4 oz. sweet basil, 3/4 oz. mint, dash of salt, and dash of pepper.

Cook spaghetti noodles according to box instructions (I cooked mine in large pot in 3 quarts of boiling water for 9 minutes). Drain pasta and place in large bowl. Season with salt and pepper to taste. Add lemon juice. Stir and set to the side.


While the noodles are cooking, chose how many cherry tomatoes you would like in your pasta (I would use at least 10) and cut each tomato in half. Cut all corn kernels off of cob. Finely chop both cloves of garlic. Remove tails from shrimp. Use however much shrimp you want, this isn't an exact science. I used one small package. Coat the bottom of a large skillet with olive oil and add tomatoes, corn, garlic, and shrimp. Cook on stove top on high heat, stir regularly for 9 minutes or until corn is beginning to turn golden brown. Remove from stove and stir into pasta, mixing well. Tear basil and mint leaves and mix into pasta. Serve while warm!

Every main dish needs the perfect pairings so I served my pasta with red wine, bread, and delicious Rainier cherries for a taste of my home state. Bon appétit!
