Ridiculously Practical Meals: White Wine And Garlic Chicken

I originally found this recipe by Meredith Steele on Spoonful.com and I was originally going to link you there, but the website keeps redirecting to Family.disney.com. I altered the recipe slightly according to what I already had in my kitchen.


Who doesn't love delicious marinated chicken covered with herbs, splashed with a bit of wine, and seasoned just right? Who also loves it when they can come home, dig in, and not worry about making dinner after work? ME! Now that the weather is cooling down, I'm quite excited to start using my slow-cooker on a regular basis! When I bought my crockpot it was just at the tail end of cool weather so I haven't used it very much, yet. I think slow-cookers are just a brilliant way to not only make eating healthy easy (making something from scratch is almost always healthier than finding it frozen at the store) and to be able to relax a bit when I get home from work. This is my first crockpot recipe of the season and I'm looking forward to a lot more!


You are going to need: 4 skinless chicken breasts, 1/2 tsp. salt, 1/4 tsp. pepper, 1 tsp. extra virgin olive oil, 1 small onion peeled and diced, 4 cloves of minced garlic, 1 tbsp. dried rosemary, 1 tbsp. dried thyme, 1 tbsp. dried oregano, 1 cup white wine, 3/4 cup chicken broth, 1/3 cup all-purpose flower.

Tip: I prepared as much as I could the night before. This included chopping the onion and refrigerating it over night, measuring out and mixing the herbs and garlic, and measuring out the flower. I left the chicken breasts and any liquids that needed to be refrigerated until morning. This saved me a lot of time when I woke up!


Start by coating your chicken breasts in salt and pepper, rub it in a little. Then heat a skillet with the olive oil. Once it's nice and hot, sear each side of the chicken breasts until they are golden brown, about 2 or 3 minutes.


In the bottom of your crockpot mix the herb and garlic with the onion. Place the chicken breasts on top.


Combine the wine, broth, and flour, stirring until the flour has dissolved. Add the mixture over the top  of everything else in the crockpot. Cover the pot and cook for 8 hours on low or 4 hours on high. I served mine of toasted pine nut couscous, but you could also serve it over rice or pasta. This recipe is definitely a keeper! So easy and I loved being able to come home and relax! I put my lounge pants on and worked on some personal projects until I was hungry and then, ta-da, dinner was ready! Bon appétit!
