Ridiculously Practical Meals: Basil Pesto Pasta
I don't know about you, but I like to use up my leftovers! After last week's post, which you can find here, I had leftover pasta, sausage, and parmesan, so I decided to make another dish that would include all three.
Despite having so many similar ingredients, this new recipe tastes quite different. You will need: 2 tablespoons olive oil, 1.5 sausages (I used this sausage), a half pound of spaghetti noodles, basil pesto (I used this pesto), a half pint of heavy cream, 1/2 teaspoon dried minced garlic, and parmesan to taste. Start by boiling some water for the noodles and cook them according to the package directions. While your noodles are cooking, put olive oil in a pan, cut sausage into bite size chunks and add to pan, cook on medium for 3 minutes. Add cream and garlic and cook for another 7 minutes on medium high, stirring constantly. When your noodles are done cooking, drain them and add the contents of the pan. Stir in pesto, mix well. Dish into bowls and top with some parmesan. All in all this entire dish takes under 15 minutes! Bon appétit!

I love the that there's sausage in this- yum. I always crave pasta in the fall + winter- it's so cozy and filling!
